This was my first time making a smoothie with tofu, and combined with sweet and sour blueberries, you can’t even tell there is tofu in it! I decided to make this as a post-work out drink since it has a decent amount of protein. I used vanilla protein powder and honey to add a little bit of sweetness to the tofu, then topped it off with raspberries and some shredded coconut. It’s thicker than most smoothies, so it can be thinned out with coconut water or coconut milk.
1/2 block firm tofu (silken tofu will also work)
5 oz. blueberry flavored greek yogurt
1/4 cup blackberries
1/2 cup blueberries
2 tbsp honey
1/2 tsp cinnamon
1 1/2 scoops vanilla whey protein powder (about 3 tablespoons)
1/2 cup coconut milk
1/4 cup coconut water
1/4 cup raspberries
Vanilla extract (optional)
Cereal of your choice (Granola or muesli works best, I used Cracklin’ Oat Bran)
1. Drain the tofu block between two paper towels and cut in half. Wash and drain the berries and cut the mango.
2. Place the coconut milk, coconut water, tofu, and fruits into a blender and blend on high speed (I used a Vitamix). Add in the rest of the ingredients and blend well on medium speed. (Slowly add in more coconut water or milk if needed to make the smoothie thinner.) Top with cereal (I used Cracklin’ Oat Bran), raspberries, and shredded coconut.
