In honor of beginning my sophomore year at Rutgers University, I’ve decided to name my first post from the dining hall with Rutgers pride in mind. Moving back in made me realize how much I had missed the banter and busy-ness of Rutgers, as well as the extremely loud school spirit!
All the upperclassmen are excited to be reunited, while the freshmen look extremely cute frantically searching for their classroom building (flashback to my friends and I last year.) My summer had been quite relaxing, but now I’m ready to shift gears and get back into preparing for the upcoming semester. In addition to mentally preparing for tests and quizzes, it is also important to prepare physically by exercising regularly and eating nutritious foods. If you don’t take out enough time to eat during the week, you could end up feeling drained and stressed by the time your test comes around (this happened to me last year, and it was not a fun feeling.)
Since everyone has more than enough time to eat during syllabus week, I prepared a tasty grilled wrap and paired it with a few sides I found at the salad bar.
Starting off healthy, but we’ll see how far that goes…sophomore 15?
1 10-inch Sun-dried tomato wrap
1 tsp pesto mayo
1 slice havarti cheese
1 1/2 cups arugula or mixed greens
1/2 cup kidney beans
1/3 cup shredded carrots
5-6 slices cucumbers
1 tsp raspberry vinaigrette
Sprinkle of shredded mozzarella cheese
- Drizzle a bit of olive oil on one side of the wrap. Flip it over and spread the mayo in the center.
- Place the havarti cheese, mixed greens, beans, carrots, and cucumbers off-center. Drizzle the vinaigrette on top and sprinkle the cheese (this will allow your wrap to stick together when it is heated up.)
- Wrap it up and place in the panini maker, grill for about a minute on each side on medium heat.
The sides that you see in the picture below are the following: Quinoa and mixed grains, black bean and corn salsa, hummus, and red baby tomatoes with some cheddar cheese.
