Crispy Egg and Cheese Breakfast Flatbread (Dining Hall)

Brunch is definitely my favorite meal of the day, mostly because it involves having some type of comfort food! I had a little extra time to myself this past weekend since I don’t have any tests coming up, so I made a warm toasted flatbread in my dining hall. I chose to use only eggs, tomatoes and provolone cheese, but you can really choose any type of vegetable and cheese to go along with the bread–simply toast the entire flatbread and the melted cheese will satisfy your craving!

Wake up! It’s time for brunch!

What better way to ease into the afternoon than with a breakfast sandwich? On weekends, I like to take my time eating at the dining hall to relax with friends, especially if we’ve had a late night out. A long brunch is the best way to get a Sunday started on the right track. It’s the last day of the weekend after all, might as well savor it!

Margherita Pizza (Dining Hall)

Why spend your cash when you could simply use your meal swipe to eat a better-quality pizza? Lately I’ve been trying to recreate dishes at the dining hall that I’ve previously eaten at restaurants, seen on TV or even on Instagram. Yes, I know it sounds silly, but it’s a sort of challenge I’ve induced upon myself. So far it’s been fun and I’ve been surprised by the results!

Grapefruit-Lime Energizer (Dining Hall)

Packed with nutrients such as vitamin C, lycopene, and potassium, grapefruit is commonly overlooked for its potential source of vitamins because of its astringent bitter taste. Always stocked at the dining hall in large amounts, only a few college students will reach for this drink, while the rest of us will opt for the better-tasting orange or apple juice. It would be a shame to miss out on all the important nutrients simply because of its strong taste; to reduce the after-taste of grapefruit juice, I added a bit of honey and some water to dilute it.
