Need a cute but chic appetizer for your next gathering? I’ve got just the thing for you. Make these mini savory and sweet toasts and they’ll definitely be a hit with the crowd. Each type of toast only requires 4 different ingredients, and what better way to celebrate summer than with simple and colorful little appetizers? The crunchy toasts pair perfectly with the cooked veggies and Trade Joe’s balsamic glaze. Well, what are you waiting for? Invite some people over and impress them with this delicious appetizer!
A creamy avocado smoothie is a perfect refresher for either the beginning or middle of your day. It functions as a morning-pick me up or a post-workout drink. The mango and banana sweetens the smoothie a bit, while the taste of the almond-coconut milk matches the good fats from the avocado. I’ve been trying to manipulate avocados lately to find other ways to use them besides traditional guacamole, it’s amazing how many different ways you can use them! I hope you enjoy this version! (Make sure your avocado has ripened slightly, so you can taste all of that healthy fat!)

Thank you Nessy’s Little World for nominating me for the Lovely Blog Award! She has a beautiful blog about fashion and maintaining good health, you should definitely check out her blog here! I appreciate the nomination and to carry the cycle forward, I have nominated several other blogs that continue to inspire me in their own unique way. Although I have never met some of these bloggers, they appear to be hard-working and extremely passionate about the subject of their blog, which always manages to show through their writing! My nominations are listed at the very end of this post.
Hi! I’m Yashna and I go to Rutgers University in New Brunswick, New Jersey. I decided to start this blog mainly because I love creating new dishes, whether I am cooking for myself or for others. Coming from a family that is absolutely crazy about food, I’ve been encouraged to cook and to learn the health benefits of various foods over time. All of my recipes are either vegetarian or vegan. Many people believe that vegetarians or vegans don’t get enough protein in their diets, but that’s not true! Ever since I got to Rutgers, one of my focuses has been to incorporate more foods rich in protein into each meal. Vegetarians and vegans might not get the full 100% of protein they need, but it can come pretty close if you eat the right foods! In the future I may calculate the nutritional value of some of my recipes, so look out for those as well!
I hope you enjoy reading this blog, I’ll be posting my new experiments from the Rutgers dining hall weekly! 🙂 (Even if you’re living off-campus or at home, these recipes are easy to make and can be prepared quickly!)
P.S. The dining hall at your college may not have the same exact foods that the Rutgers dining halls have, but you might be able to find substitutes!
