Easy Summer Cherry Parfait (Home)

IMG_1106 - Version 2

As the summer days are getting hotter, my dad and I like to “chill out” with some greek yogurt. Adding fruits and some granola to greek yogurt packs makes for an easy snack, and all the possible fruit combinations yield many unique parfaits.

I chose to make a cherry parfait since my parents grabbed a huge bag of cherries from the grocery store and we weren’t quite sure what to do with them anymore…enter parfait! Summer is a great time to try new parfaits since so many fruits are in season!

(Makes 2 servings)

Ingredients:

1/4 cup muesli

5 oz. coconut flavored greek yogurt

2 tsp honey

1 small peach

1/2 cup blueberries

1/2 cup strawberries

1/2 cup cherries

1. Wash all fruit, slice the strawberries and peach.

2. Divide the muesli and place in each cup, followed by some greek yogurt, sliced peaches, strawberries, blueberries, and honey. Add more greek yogurt and top with the whole cherries.

To top it off, you could add some slivered almonds or dark chocolate chips.

There aren’t many ingredients in this butter, so you probably already have them lying around the kitchen (just make sure to get some fresh herbs to really bring out the taste of all the other ingredients). This was gone in a few days, so unlike me make a bigger batch and store it in the fridge or freezer in an airtight container. With July 4th right around the corner, it’ll probably come in handy!
