Margherita Pizza (Dining Hall)

Why spend your cash when you could simply use your meal swipe to eat a better-quality pizza? Lately I’ve been trying to recreate dishes at the dining hall that I’ve previously eaten at restaurants, seen on TV or even on Instagram. Yes, I know it sounds silly, but it’s a sort of challenge I’ve induced upon myself. So far it’s been fun and I’ve been surprised by the results!

This recipe will be the first of many personal pizza recipes to come. Margaritas are and I believe will continue to be a classic dish in Italian cuisine, and have become a sort of focal point in Italian-American culture that can be observed through the various popular pizza joints scattered throughout the United States today. The combination of only 3 ingredients–a golden crust, tangy tomato sauce, and luscious mozzarella cheese–combine on your tongue to prove that the simplest foods are oftentimes the best.

Ingredients:

1 panini base

1/2 cup marinara sauce

5 tomato slices

1/3 cup spinach

1/4 cup shredded mozzarella cheese

2 tbsp diced tomatoes (optional)

1 tbsp olive oil

  • Spread olive oil on both sides of panini base.
  • Place the panini base on the panini grill and leave until golden-brown.
  • Place marinara sauce, spinach, sliced tomatoes, and mozzarella cheese on the base and place in the oven until the cheese has melted (about two minutes). Remove, slice and enjoy!
